Zanzibar White Sand Luxury Villas & Spa is looking for its future Executive Chef. You will be in charge of all the food outlets of the establishment: breakfast, the Beach Restaurant, the Doors to Zanzibar restaurant, room service, and banquets, as well as the two restaurants dedicated to our staff.

Team Management and Leadership

  • Organize the work of all kitchen staff – scheduling, HR follow-up, task allocation, communication of instructions…
  • Ability to adapt to the diverse demands of management, clients, and varying activity flows.
  • Possibility of split shifts based on operational needs.
  • Lead and maintain team cohesion and motivation.
  • Transfer knowledge and skills – a natural trainer.

In the Kitchen

  • Create a creative cuisine in line with the general management’s instructions.

  • Develop and create menus for all food outlets.

  • Execute all culinary techniques.
  • Create and update menus based on seasonal products and management expectations.
  • Respect the predefined cost per dish.
  • Manage inventory and ratios.
  • Ensure compliance with HACCP standards.
  • Implement a food safety management plan.
  • Maintain a cleaning plan for all culinary areas.
  • Inspect and ensure adherence to hygiene rules.
  • Ensure cleanliness of uniforms and grooming.
  • Manage technical and preventive maintenance follow-ups.
  • Manage kitchen material resources – purchasing and restocking.
  • Control the proper use of equipment and materials.
  • Establish an efficient work organization compatible with production and contingencies.
  • Organize workstations.
  • Create technical sheets.
  • Analyse costs and ratios.

Relations

  • Greet and interact with clients.
  • Build customer loyalty and attract new clientele.
  • Know the level of customer satisfaction.
