Job Summary

We are looking for a dynamic Food & Beverages (F&B) Manager who will be responsible for overseeing all food and beverage operations, ensuring an exceptional experience that meets our standards for quality, safety, and hospitality. This includes managing kitchen and service staff, overseeing inventory and procurement, and maintaining hygiene and safety standards. You will play a key role in designing and delivering a unique culinary experience that enhances our guests’ adventure in the Serengeti. This role will report to the Base Operations Manager.

Key Responsibilities:

  • Operational Management: Oversee the daily F&B operations, including pre-flight refreshments, breakfast service, and any special events, ensuring efficiency and a high standard of service.
  • Team Management & Training: Manage, train, and motivate the F&B team to deliver exceptional service, ensuring all staff adhere to company standards for guest service & care.
  • Menu Planning & Quality Control: Collaborate with the culinary team to develop menus that reflect local flavours while ensuring quality, freshness, and consistency.
  • Inventory & Procurement:Oversee inventory control and liaise with the procurement team to ensure timely and cost-effective ordering and delivery.
  • Vendor Network: Manage and nurture vendor connections to maintain a trusted network.
  • Hygiene & Safety Compliance: Ensure all food preparation, handling, and storage meets safety and hygiene regulations, adhering to both local standards and company policies.
  • Budget Management: Manage the F&B budget, optimising costs without compromising quality, and implementing cost-control measures where appropriate.
  • Guest Satisfaction: Ensure that the F&B experience is memorable and aligns with the overall guest experience, taking feedback into account to continually improve service.

Mandatory Skills and Qualifications

  • Management experience: Minimum 5 years in an F&B or hospitality management role, ideally in a safari lodge, base camp, or outdoor event setting.
  • Team Management: Proven ability to manage, train, and inspire a team in a high-pressure environment.
  • Culinary & Service Knowledge: Solid understanding of food and beverage preparation, presentation, and service standards.
  • Organisational Skills: Highly organised with the ability to manage inventory and schedules in a remote setting.
  • Budgeting: Experience in managing budgets, controlling costs, and optimising resources.
  • Safety & Compliance Knowledge: Familiarity with health, safety, and hygiene regulations, with a commitment to maintaining a safe environment.
  • Communication Skills: Effective communicator with strong interpersonal skills to engage with team members, vendors, and other departments and resolve conflicts as they rise.
  • Languages: Fluency in English and Swahili is essential; additional languages are an asset.
